Miyabi Chef's knife 5000 MCD 67 Gyutoh, 20cm from Zwilling and Miyabi. Chef's knife made of 133 layers of weighted steel and an extremely hard core of Micro-Carbide MC66 powder steel, giving a hardness of approximately 67 Rockwell after being ice-hardened at -196 °C. The handle is made of black maple in a traditional Japanese "D" shape. All knives from Miyabi are made by hand in Seki, Japan, and should only be washed by hand.
