Paring knife 5000 MCD 67, 9cm from Zwilling and Miyabi. Compact and robust paring knife that is one of the chef's favorites in the kitchen due to its incredible sharpness and precision. The knife is made from 133 layers of weighted steel and an extremely hard core of Micro-Carbide MC66 powder steel, which gives a hardness of approximately 67 Rockwell after being ice-hardened at -196 °C. The handle is made of black maple in a traditional Japanese "D" shape. All knives from Miyabi are made by hand in Seki, Japan, and should only be washed by hand.
